This aperitif or side dish is a crispy addition to any Italian main dish. I simply began with my grandmother's recipe for bruschetta and added fresh tomatoes! It is one of the most delicious bruschetta recipes I've discovered.
Ingredients
1/4 cup olive oil3 tablespoons freshly sliced basil3 to 4 minced garlic cloves1/2 teaspoon salt1/4 teaspoon pepper
4 medium tomatoes, sliced2 tablespoons of Parmesan cheese gratings1 baguette (1 pound) of French bread without slices
Directions
1. Oil, basil, garlic, salt, and pepper should be mixed together in a big basin. Toss the tomatoes in while using a light hand.
Cheese should be sprinkled on top. Refrigerate for at least one hour before serving.
2. Before serving, allow the food to come to room temperature. Toast the bread under the broiler until it is golden brown and then cut it into 24 pieces.
Spread tomato mixture over the top. Immediately serve after cooking.
